Stinky tofu in Shaoxing

Stinky tofu, the iconic "bizarre food" in China, is a form of fermented tofu with a strong odor.

In Shaoxing, Zhejiang province, stinky tofu is a must-try street food. It's made by soaking tofu in a fermented brine of vegetables.

The brine is made first and left to fester for weeks, sometimes months, resulting in a putrid, rotting brew. Then, workers will add tofu for further fermentation.

Stinky tofu is usually deep-fried and accompanied by spicy or sweet sauce. With many people scared away by its unique smell, loyal fans insist this snack is something that smells stinky, but tastes good. 

绍兴臭豆腐是有着丰富文化底蕴的汉族民间休闲小吃,距今已有近千年的历史。臭豆腐利用新鲜蔬菜发酵卤水,通过腌制和油炸,佐以甜辣酱,是绍兴美食的必修课。
