The first-ever Michelin Guide for Shanghai, Jiangsu, and Zhejiang will be unveiled on April 9 in Taizhou, East China's Zhejiang province.

This new guide will feature listings from Shanghai, Hangzhou, and key Jiangsu cities, including Nanjing, Suzhou, and Yangzhou. It will also add Changzhou in Jiangsu, Wenzhou, and Taizhou in Zhejiang as new culinary destinations, highlighting the rich and diverse food culture of the Yangtze River Delta region.

Taizhou, with its unique "mountain and sea flavors" and rich historical and cultural heritage, has become a regional culinary landmark.

Gwendal Poullennec, international director of the Michelin Guide, said that Taizhou's cuisine makes the most of its mountain and sea resources — with fresh seafood and simple yet flavorful local farm ingredients. The city's chefs are praised for using minimal cooking techniques to highlight the natural sweetness of their ingredients.

Specialties such as seafood from Wenling, bamboo shoots from Tiantai, free-range chicken from Xianju, and shrimp from Linhai exemplify the city's harmonious approach to food, while signature dishes, such as home-cooked yellow croaker, ginger soup noodles, and fried sweetened bean paste coated with egg whites, showcase Taizhou's culinary creativity and meticulousness.

As the city prepares to host the Michelin Guide celebration this year, Taizhou is poised to further showcase the diverse and evolving flavors of Chinese cuisine to the world.
