Ginger noodle soup reveals Taizhou's culinary tradition

In Taizhou, Zhejiang province, ginger, rather than chili, gives local cuisine its distinctive heat. Ginger noodle soup, once a traditional postpartum dish, has evolved into an everyday specialty that reflects the coastal city's long-standing food traditions.

Located along the coast, Taizhou experiences a humid climate and is rich in seafood. Historically, locals have combined ginger with seafood and other ingredients in their cooking.

The tradition is being preserved by Jiang Taigong Ginger Noodle Soup, whose founder, Jin Xianguo, is a fourth-generation inheritor of Taizhou's traditional ginger noodle-making techniques. The brand continues to make "postpartum ginger slices" using traditional methods, including soaking ginger in yellow rice wine, sun-drying it, and slow-cooking it.

The process softens the sharpness of fresh ginger and gives the soup a milder, fuller flavor. The soup is served with rice noodles made from local rice and ingredients such as dried shrimp, daylilies, tofu skin, mushrooms, bamboo shoots, pork, and fried eggs.

Jin stated that the aim was to preserve traditional methods while making them more accessible to today's customers. The brand has broadened its menu to feature various types of ginger noodle soup and other classic ginger-based dishes.

The dish is also becoming part of Taizhou's tourism offerings, linking local food traditions with the city's mountains, historic towns, and cultural attractions.
