In Da'an township, Taishun county, Wenzhou, Zhejiang province, sunny days transform Daqiuping village into a vibrant hub of activity. Bamboo mats line the roads, covered with freshly cut rice noodles swaying gently in the breeze, releasing a rich aroma of rice.
Crafted from high-quality local rice, Da'an's rice noodles undergo traditional processes of soaking, milling, steaming, and drying before being cut into strips, resulting in a product that remains firm after cooking, with a smooth texture and rich flavor.
A handful of dried noodles briefly soaked, then tossed with vegetables and topped with a fried egg, offers a fragrant, silky flavor cherished by locals.
This authentic taste inspires strong local pride. Zhou Debao, deputy director of Daqiuping village, said production is still largely manual and weather-dependent, with each household producing just over 30 kilograms a day — often not enough to meet demand. "We even ship to the Xizang autonomous region," he added, "but mostly to Taishun natives working away from home."
From local rice noodle shops to breakfast stalls, these noodles remain a staple, consistently meeting demand for this beloved dish.
