​Tasty local dishes from Jindong district

Here are two cold dishes which are highly popular in Jindong district in Jinhua, East China's Zhejiang province.

The town has a rich history spanning thousands of years and is known for its variety of delicious delicacies.

The lotus root is rich in vitamins, protein and trace elements like iron and calcium.

Several ingredients and procedures are needed to make this delicious dish. Lotus roots stuffed with sticky rice must be simmered for over an hour until they are soft before they are sliced and coated with honey.

The Chinese believe that the duck offers a wide range of health benefits and can help remove excess internal heat and toxicity.

Locals love their duck chewy, and this is why they only use ducks that are three years old.

Parboiling the duck with spices can remove any gaminess that might be present. Soy sauce, rice wine, rock sugar and dried pepper are used to make the sauce for the duck. 

When completely cooked, the duck must be soaked in the sauce for half a day so that it is thoroughly infused with the tantalizing blend of flavors.
