Wagang zhijiao, or simmered pettitoes in earthen pot, is a famous dish handed down from the family banquet of Liu Bowen, the founding father of the Ming Dynasty (1368-1644) who was born in Nantian town, Wencheng county, Wenzhou.

The pettitoes, after being treated, stir-fried and braised, should be simmered in an earthen pot for hours until crispy, resulting in a shiny and fragrant dish.

Liu Bowen's family banquet was originally preserved by Liu's descendants in memory of their ancestors. The family banquet has now been recreated in Nantian town by referencing historical records and folk practices, selecting some familiar dishes, and integrating them with Nantian local specialties.
