Southern Chinese prefer rice-based foods, and residents of Wencheng county, Wenzhou, Zhejiang province are no exception.
Wenzhou chao fen gan, or Wenzhou fried rice noodles, is a traditional dish in Wenzhou. The rice noodle is usually cooked with lean meat, mushrooms, eggs, and scallions.
Sansi qiaoyu, or minced fish soup with sansi – shredded chicken, ham and mushroom – is a traditional dish from Wenzhou city in East China's Zhejiang province.
Wenzhou's more traditional locals prefer their food with a mild and subtle taste, especially seafood, which they prepare most often in just one way – steaming – in order to preserve the originality of the fresh ingredients.
